Savory Eats: Ssambap Korean BBQ

    Ssambap Korean BBQ in Stony Brook may be my new favorite restaurant on Long Island. Owner, John Shim, is one of the few remaining great restaurateurs who are focusing on quality and innovation, while preserving honored traditions. 
    My guest and I started our meal with the chicken wings, Seafood Pajun, and Bibimbap. For those unfamiliar with Korean cuisine, get acquainted. Sweet, salty, tangy, textured, and layered goodness. Plus, it’s a fun dining experience that is great for first dates and group outings. Or, simply for a much-needed night out. The chicken wings were incredible – juicy on the inside, crunchy on the outside, covered in a tangy, spicy sauce. The bibimbap, one of my all-time favorite dishes, was delicate in presentation, and full-bodied in flavor.  A mix of rice, vegetables, beef and a fried egg – it’s seriously good. For our entrée, we enjoyed authentic Korean BBQ, specifically the Wang Kalbi Gui – prime short rib marinated traditionally in soy sauce. Out of this world. The steak was cooked medium as requested, and the marinade was delicious. We then sampled the Pork Belly, which was one of my favorite recent renditions. Crispy on the outside, flavorful on the inside. On my next visit to Ssambap Korean BBQ I plan on trying the prime pork rib and Tukbockee – stir-fried rice cake in a chili sauce with fish cake. I’d also love to sample the Tuna Cado and Mandoo – pan fried shrimp and vegetable dumplings. 
    My favorite thing about this place is its ode to authenticity while maintaining unprejudiced views about culinary innovation.  It doesn’t pretend to be something it’s not.  Owner, John, has worked in kitchens for Michelin restaurants such as Eleven Madison Park in New York.  He has culinary experience in Paris, and lights up when you talk to him about food. He lives for good food, like me. He jokes about planning his travels around restaurants and dishes he’s been eager to try. He is the heart of this operation, and it shows through the outpouring of support from locals and first-timers alike. This place is incredibly unpretentious and very open to trying new things.  They are mastering authentic Korean BBQ on Long Island, and looking to the future to continue expanding their menu offerings and specials.  From the outside of the restaurant you wouldn’t expect this foodie wonderland to exist. Once inside, you’re mesmerized by the traditional architecture, modern touches and excellent service.  Whether it’s your first visit, or your weekly visit as a regular, everyone is treated as a VIP.  The combination of quality ingredients, fun ambiance and stellar service make this place a must-try.  If you’ve never tried Korean BBQ, this is the time and the place.  Trust me.
