Farm Fresh and Fabulous! Tomatoes & Fresh Mozzarella Salad (Insalata Caprese)

    I feel blessed to live on Long Island, especially during the summertime, when it flaunts its lush green landscapes and beautiful waterways. Home to many family owned farmsteads, the north and south shores are certainly the place to be this time of year. So, take full advantage by supporting your local farms and farmer’s markets; they are the ones that provide us with fresh, local grown vegetables, fruits, flowers, herbs, honey, homemade jellies, breads, pies and more. 
    However, it’s those robust and juicy ripened tomatoes that I really love most! Tomatoes sliced with fresh mozzarella and basil, tomatoes with fresh string beans and potato salad, tomato sauce, tomato sandwiches—truly the essence of summer to me! 
    There’s something so special about eating and shopping outdoors. The feeling of local camaraderie, combined with the exchanging of recipes and forming of friendships, is what makes shopping at farmer’s markets a unique and warm experience. My advice is to head out early in the day – while the selection is still at it’s best – since vendors usually have a limited supply to sell. During your outing, plan your meals around the local varieties that are in season (try to keep it light and healthy during the summer). Also, plan on bringing cash, as this is usually the preferred method of payment. 
    For those who enjoy home cooked meals, now is the time to experiment with fresh ingredients and to taste all the delicious flavors created in your dishes. Here is a quick and simple recipe that I prepare as a side and sometimes even a meal. Full of pure, simple flavors: a delicious tomato and fresh mozzarella salad with basil– no cooking required. Add a grilled baguette that’s been brushed with olive oil for dipping, a glass of wine and of course, eat outside! Yum! Enjoy and see you at the market Saturday morning.

Tomatoes & Fresh Mozzarella Salad (Insalata Caprese)

Ingredients
6 ripened tomatoes
¾ cup fresh basil chopped or whole leaf
½ cup good olive oil 
½ t sea salt
Fresh ground pepper
1 t fresh or dried chopped oregano or marjoram
8 oz fresh mozzarella

Slice the tomatoes vertically rather than horizontally, as this helps them stay firmer in your salad. Slice the fresh mozzarella and layer alternating slices of tomato and cheese, adding basil leaves between each layer. Season and drizzle with oil. Let sit for 15-20 minutes to draw out the juices of the tomato and marinate the flavors. Enjoy!!! xoxo Denise

 

 

Chasing Happiness

    Everyone is looking for something to happen before they can be happy – “If I just get that raise, new job, or find that wonderful relationship, then I know I will have found happiness.” Especially now, after feeling stuck and having been inside for months, we are waiting for the chance where happiness will find us. Like I tell my daughter, who at three years old, wakes up crying for reasons very small… “Let’s do something to change that”. 
    What if we had the chance to be happy right now in this moment? Would you take it? Would you change it? Or, do you want your focus to be on continuing to have a rough day? To find wellness, the first step is to recognize what already makes you happy and there are two ways to do that. Spend intentional time doing things that you enjoy. Then, identify every opportunity to be grateful. Although it may sound overly simple, why not try?
    As a mother, I recognize that my children are having the most fun when they play. As an educator, I witness students finding joy in learning subjects that are pleasurable to them. When was the last time you played? “Play” can be defined as, engaging in an activity for the pure enjoyment of it; doing something you like to do. Blast music and dance. Experiment and cook. Tinker with a train set. Read. Go fishing. Listen to the rain. As you are experiencing these things you enjoy, don’t pass judgement on yourself for what else you could be doing. Just play. Many of these things could be done in less than 30 minutes. Wouldn’t it be worth staying up a ½ hour later to do something you enjoy?
    Let’s explore the latter. What are you grateful for? From monks to millionaires, all those who identify as being the happiest and most successful, spend their time feeling thankful for what they have. Take a moment now and think of three things to be grateful for—regardless of the proportion, just name three. It shifts your mindset. Expand on it. Write it down. Then, before you go to bed, rather than replaying the days events, drift off to sleep feeling grateful for the things, people and experiences you have in your life. Tie it to something, or  even turn it into a mind-strengthening game if you’d like. For example, every time you see an object, challenge yourself to think of three reasons for gratitude. 
    Now, here is the difficult part: creating a habit (which ususally takes approximately 28 days). Don’t do something for a week and write it off, instead, recognize how good you feel when you are in these moments, as brief as they may be. Experience is the greatest teacher, so don’t take my word for it. Recognize that in your present moment, you are enjoying yourself while you play or feel grateful. However, what if you committed to it? Creating these practices could change your life. By no means do I, or any one person, have all the answers, although, I would encourage you to ponder where your current methods of pursuit of happiness have led you thus far. Have they been effective? Fruitful?
    What if you began creating a new focus or a new habit now and, what if the positive elements you begin to focus on going forward, continue to increase before your eyes? If that was true – even a little bit – why not try?

 

Investors Bank Foundation Supports Michael Magro Foundation’s Project S.O.A.R. for Kids Recovering From Cancer

    Long Island, NY: When school resumes in the fall, children everywhere will be adjusting to a new ‘normal’ due to COVID-19. For children who have been hospitalized or home undergoing cancer treatment, the adjustment will be very challenging. Thanks to a grant to Michael Magro Foundation’s Project S.O.A.R. from Investors Bank Foundation, these children and teens will find their transition back to school more comfortable. 
    Michael Magro Foundation created Project S.O.A.R. (School Re-entry Ongoing Academic Resources) to aid children re-entering school following a lengthy absence for cancer treatment. Children often have questions about their returning classmate, that teachers and staff may struggle to answer. Their classmate may have new learning needs while rebounding from chemotherapy. S.O.A.R. increases each child’s chances for a positive, successful academic experience during treatment and beyond. For a child to thrive in the classroom, a smooth “re-entry” to the school environment and ongoing assistance are needed. Project S.O.A.R. nurtures the pediatric cancer patient, his/her family, academic team, and peers. The result is a successful collaboration for all. 
    Investors Bank and Investors Bank Foundation have been strong supporters of The Michael Magro Foundation. Their active role has ensured the Foundation can provide its much-needed programs to the community. Michael Billia, Senior Vice President of Investors Bank’s Long Island Market, noted that Investors supports the Foundation because they have seen, first-hand, the tremendous work being done.     The Michael Magro Foundation is a 501(c) 3 non-profit organization founded by Paul and Terrie Magro honoring the life of their son Michael, who passed away from leukemia at age 13. The Foundation works with the Cancer Center for Kids at NYU Winthrop Hospital, Stony Brook Children’s Cancer Division, and other Winthrop and Stony Brook pediatric specialty centers, as well as Golisano Children’s Hospital in Southwest Florida. In addition to SOAR, core programs include: Life Essentials [helping families struggling financially during their child’s treatment with non-medical expenses], and Bonding With Baby [helping siblings of babies in the Neonatal Intensive Care Unit (NICU) communicate and bond].  In partnership with The Spencer Foundation, the organization added Operation Playcation, which provides inpatient pediatric hospital patients with Playstation 4 units and an array of gaming choices.

Beach Essentials 2020

    This summer might feel a bit different, but we can’t complain too much since at least one of (in my opinion) the most important activities wasn’t taken from us… our Long Island beaches! Even though our socially distant beach days could look somewhat unusual (being capped at 50% capacity, no concession stands, etc.), the few things that haven’t changed are the must-have items for a fabulous day by the beach. 
    I think most of us can agree that we’ve gained a new perspective on life over the past few months and for me, that includes a stronger appreciation for the outdoors. Being outside allows us to have some sense of normalcy, while still having the ability to remain socially distant. 
    There are so many fun activities to fill up our days: hiking/camping, participating in water sports, having a picnic, re-discovering drive-in movies, and of course my personal favorite… going to the beach. So, to help you create the perfect stylish set-up for the rest of your beach days, check out the below essentials!

Summer Shrimp Rolls

 

Sun… Summer… Succulent Shrimp Salad… all create a lovely summer scene. It just wouldn’t be summer without a shrimp roll! As our warm weather has finally arrived, my thoughts and cravings usually navigate me to take a leisurely ride out east for those tasty shrimp or lobster rolls. A light shrimp salad roll, served outdoors with a glass of chilled chardonnay or pinot grigio, makes for a great lunch or refreshing dinner. I usually keep a big bag of frozen large shrimp in my freezer for the convenience of meal planning throughout the summer— this allows for a quick and satisfying New England experience upon my every craving. 

These summer shrimp rolls are an essential summer treat that can be thrown together fast or found abundantly at your local seafood market. You can buy the shrimp fresh and boil them in hot water, seasoned with Old Bay Seasoning, until they turn pink (usually 3-4 minutes). If you really want to make it easy, buy the shrimp already cooked, peeled and deveined. Shrimp salad itself is always great served over greens or stuffed into tomatoes, but it shines brightest on a toasted New England style, split-top potato roll, with shredded lettuce. A little pricey, a bit messy but in one bite you’ll agree… so worth it!

Ingredients : 

  • 30 large shrimp
  • ¾ cup or more of mayonnaise
  • 1 cup of freshly chopped celery
  • 2T chopped fresh dill
  • 2T chopped fresh chives
  • 2T chopped fresh parsley
  • A pinch or two of Old Bay Seasoning
  • 1 teaspoon of a grainy mustard
  • Fresh ground salt and pepper to taste
  • Shredded lettuce
  • 6 split-top rolls 

Roughly chop up shrimp in large chunks and gently fold together with mayo, celery, herbs and seasonings. Toast or grill the rolls (can butter them if desired). Place shredded lettuce in each roll and stuff with the delicious sea fragrant shrimp salad. Enjoy!!! xoxo Denise

    It’s the most wonderful time of the year… grilling season! Is there anything better than sitting outside with an ice-cold cocktail in your hand, the smell of something amazing cooking on the grill, and the sounds of the kids splashing in the pool?  To me, that’s the ultimate summertime joy. 
    Now, I know you need to change up the burger/hot dog game, so I’m bringing out some of my favorite grilling and cocktail recipes!

Pineapple-Hoisin BBQ Ribs
Ingredients :

Infusing the Ribs :
•    2 racks of St. Louis style pork ribs or baby back ribs
•    1/4 cup soy sauce
•    3 garlic cloves, smashed
•    1 tablespoon dried thyme
•    2 teaspoons granulated garlic
•    1 teaspoon pepper

The BBQ Sauce :
•    1/2 cup pineapple jelly 
•    1/2 cup hoisin sauce
•    1/4 cup soy sauce
•    1 tablespoon Dijon mustard
•    2 garlic cloves, pressed or minced
•    2 tablespoons sesame oil
•    Garnish with pineapple pieces, parsley, and/or sesame seeds

Instructions

Use the biggest pot you have.  Remove the ribs from packaging and cut them in half.  Place in the pot and fill with water until the ribs are covered. 
Add the soy sauce, garlic, and seasonings.  Give it a stir and allow the ribs to come to a boil over high heat.  Lower to medium-low and cook for 2 hours (starting from when you put the ribs on the stove, NOT from when they started boiling).  Stir occasionally and push the ribs down if they float to the top.
Using tongs, remove the ribs from the pot carefully and pat them down with paper towel.  Assemble the sauce with the remaining ingredients, except the garnishes.  Mix well to ensure that all ingredients are incorporated into each other.
Coat the ribs with the sauce using a basting brush and leave about half for grilling.  Let sit for at least a half hour. 
Grill the ribs on a hot BBQ for about 15 minutes. All you’re really doing is allowing the amazing glaze to caramelize and the ribs to get grill marks. Baste the ribs as they’re cooking with the glaze. You should end up with no leftover glaze after barbecuing.
Remove the ribs from the grill and place on a cutting board.  Cut the ribs leaving meat on each side of the bone.  Garnish with pineapple, parsley and/or sesame seeds.  Enjoy!

The Lushy Lemonade
Ingredients

•    2–3 oz. Firefly Sweet Tea Vodka
•    3–4 oz. Simply Lemonade
•    Ice
•    Lemon slices for garnish

Instructions
Combine the Sweet Tea Vodka, lemonade (according to taste), and ice into desired glass. Pour all contents from glass into a shaker and shake vigorously. Pour the contents back into the glass. Top with lemon slice.  Enjoy!

Designing for Outdoor Living in Today’s New Normal

    With today’s casual lifestyle, even in the most elegant of residences, the outdoor areas of homes have truly become an extension of entertaining and decorating. Since our everyday routines have changed so drastically within just months, the exterior living space has been proven essential to our health and well-being. Staying at home and social distancing, the new watchwords to live by, has led us to transform our outdoor space into a personal sanctuary. 
    While many people will not be vacationing this summer, “staycations” have become a popular and even necessary outlet in today’s new normal. Budgets large and small, are now being spent on creating an outdoor lifestyle that is welcoming and fun – an “extra added attraction” if you will, to the well-designed home. So, what can the outdoors encompass? Certainly, the old barbeque on wheels has long passed its prime, replaced by entire kitchens and fireplaces, it is used for cooking and warmth (allowing for an extension of the outdoor living season into cooler months).

Though we’ve had to make significant adjustments to our daily routine, we must also appreciate the deeper sense of connectedness we’ve experienced with friends and family.  We all have good days and bad, but now that summer is here, let’s make the best of both.  Hiking, biking, and picnicking have always been favorite activities of mine, more so now than ever.  So, here are several fun activities that’ll keep you safe during these unprecedented times.
    Pack your bicycles, a picnic lunch and head out east.  Southampton is a great town to bike along, especially on Meadow Road which parallels the ocean with magnificent homes and views. You can picnic on the lawn at Lake Agawam Park; just bring along chairs or a blanket to enjoy the lakeside scene.  New Suffolk is another beautiful spot to ride your bikes safely. New Suffolk Avenue, in particular, has breathtaking meadow and bay views. P.S., all farm stands are open, so don’t forget to support your local farmers.
    Pop-up drive-in movie theaters are now appearing all over Long Island.  There is one located in the Northgate Shopping Center of Commack (with food supplied by Mema’s Little Italian Kitchen). To look for and reserve tickets, visit www.limovienights.com. Other locations include: the Smith Haven Mall in Lake Grove, the Farmingdale Adventureland and Vespa Italian Chophouse in Northport. 
    Hike where the trails aren’t crowded.  I’ve found that Brookhaven State Park off Exit 68 of the LIE (go north approximately 5 miles) is a great place to take a 3-5 mile loop hike in the Pine Barrens.  All you’ll need is a packed lunch and chairs for a nice picnic in the park.  Another great and open spot is the hiking and bike trails in Kings Park, on the grounds of the old Psychiatric Center. You can walk or bike down to the Nissequogue River State Park or hike the nearby Greenbelt Trail.
    Host a BYO happy hour on your deck or in your yard while maintaining proper social distance.  Play games like Charades or Pictionary while catching up with friends and neighbors. Now that summer is here, you don’t have to wait for the weekend to have fun!
    Even though we must wear masks and have hand sanitizer handy wherever we go, there’s no better time than summer to enjoy and explore our beautiful and bountiful island.  I wish you all a Happy, Healthy, and Safe Summer!

Out with the old, in with the new (or so they say). The spring trends are on their way “in” and there’s so much to look forward to!
    You might think clothing takes up the majority of your outfit, but the truth is, accessories are the best way to spice it up, express your style, and show who you are. They can either complete the look you’re going for or take it to a whole other level. 
    Personally, I’m more likely to expand my accessory collection in the spring/summer than in any other season. Sunglasses, hats, jewelry, and handbags are more fun to browse for during that time anyway, although searching for the perfect ones can be more time consuming than picking out the perfect spring dress.
    Like clothing, there are certain accessories appropriate for every occasion. You could be wearing the most basic outfit (i.e. white shirt and jeans) but by adding a colorful handbag, statement jewelry, and/or trendy headband, it could make for the perfect Friday office look. Then, for an evening with friends or date night, throw on a pair of heels and some of your best jewelry. There’s not even a need to bring a change of clothes; it’s as easy as throwing some additional accessories into your handbag (or car) so you can swap your look on the go! 
    Remember, there are certain rules when it comes to accessorizing… you don’t want to go overboard and look like you don’t know how to put an outfit together. Everything should match or coordinate in color, style and material.

Celebrate… St. Patrick’s Day

    St. Patrick’s Day is one of my all-time favorite holidays. If I’m not going into Manhattan or driving out to Montauk for the parades, I generally try to stay close to home and find a good pub. I proudly celebrate my Irish roots, and thoroughly enjoy surrounding myself with live music, authentic cuisine and a good pour of Guinness. Chances are, you can catch me between the same few places, depending on the year, and the festivities. 
     Main Street Café in Northport Village is my first-place pick. It’s cozy, authentic, and I genuinely enjoy being surrounded by the local folk I’ve come to know and love. Their St. Patrick’s Day celebrations are perfect – live music, corned beef and cabbage, pints of Guinness, friends, and family. It’s busy, but still remains enjoyable each year I participate. Picture this: you walk into a jolly pub on Main Street, people passing around bowls of corned beef and cabbage (similar to my grandma’s house growing up), a singer leading the crowd in song – it feels more like St. Patrick’s Day than anywhere I’ve celebrated before. It’s not cliché, it’s not cookie-cutter – it’s reliable, and warms the heart in a nostalgic way. 
     For something a bit rowdier, I opt for Napper Tandy’s of Northport or Changing Times of East Northport. They keep it simple, which I appreciate. Beer, food, no-frills. These spots are generally pretty busy and filled with local patrons who are diligently enjoying baskets of wings and cold brews. Both spots have a long bar with plenty of seats, a full bar menu and many TVs. Napper Tandy’s also has impressive live music that’s worth checking out.
     Some other spots that may be worth checking out for St. Patrick’s Day are Jackie Reilly's in Bethpage, Paddy’s Loft in Rockville Centre and Reeses 1900 Pub in Patchogue. Most have local, live music and pint specials. If I’m going to Reeses, I’m ordering a burger or classic entrée – fisherman’s platter, shepherd’s pie or fish and chips. If I’m going to Jackie Reilly’s, I’m ordering the onion soup, and a Gaelic steak or wings. (I’ve also heard great things about the shepherd’s pie, all of their sandwiches and bangers n’ mash.) At Paddy’s Loft, I opt for the Irish soda bread, French Onion Soup, and/or chicken pot pie. 
     Whether you plan on staying local, or adventuring to a new spot, I hope you enjoy this St. Patrick’s Day with friends and family, over a traditional meal and a perfectly poured pint. 

 

St. Patrick’s Day “Baci” Biscotti

Let us all celebrate St. Patrick’s Day wearing the traditional color green. Have yourself a blessed day with a great sumptuous corned beef and green cabbage meal, then top it off with these delectable green biscotti cookies! (Yes… 
I am Italian but love the twist.)                 Believe it or not, the color originally associated with St. Patrick’s Day was blue, but over the centuries, green dominated. It is said, Saint Patrick used the shamrock to explain the Holy Trinity to the pagan Irish. On March 17th, we observe St. Patrick’s Day as a celebration of Irish and Irish American cultures.              My father, was born in Sicily, Italy and came to America as a young man. A butcher by trade, he was delighted to learn and share in this fun cultural celebration. Each year he’d bring us home the most beautiful cut of corned beef, and for that lucky day, we were Irish! In honor of my Dad…“PAT” (Pasquale), you will just love the taste of pairing the green pistachio nuts and the white chocolate with my delicious biscotti recipe.                             Serve with shots of espresso and Bailey’s. “Top’ of the morning to you… and the rest of the day!” “Baci” (kisses) and a Happy St. Patrick’s Day/Birthday to my (a wee bit Irish) green eggs and ham… Our SAM!  Lucky Boy, My Sweet Grandson. xoxo, Denise

Ingredients
& Prep

½ cups shelled whole
    pistachios
1 stick unsalted butter
3 eggs
1 cup sugar
1 t vanilla extract
3 ½ cups all purpose flour
1 t baking powder
½ t salt
6-8 ounces white melting
    chocolate
Green food coloring

    Place one oven rack into the center of your oven and preheat oven to 350 degrees.
    Prepare baking sheet with parchment paper or lightly greasing, set aside. Lay the pistachios in single layer on cookie sheet, bake approx… 10 minutes then cool. In a bowl, beat butter until light and fluffy using electric mixer. Gradually add eggs, sugar, and vanilla until creamed. Add all dry ingredients to a separate large bowl and blend well. Add wet mixture to dry and mix well. Add in pistachios and mix well. Put the dough onto a lightly floured surface and cut in half. Roll each half into a log (1 inch high-12 inch long). Place logs onto pan leaving 3 inches apart. Bake for 35 minutes or until bottoms are lightly brown. Remove from oven and cool for 5 minutes. Move logs to cutting board and slice each on a diagonal into 1 inch thick slices. Place biscotti’s on their sides onto pan and bake 10 more minutes, turning over again at halftime (5 min). Remove from oven and cool. Melt white chocolate in microwave or double boiler, adding food color until desired shade. Dip biscotti into melted chocolate and place on wax paper. Add additional pistachio pieces or green sugar sprinkles. Store in air tight container to maintain freshness.  GO GREEN!
