    Memorial Day is fast approachingWhat better way to embrace the unofficial start of summer than with a kick-off party?  Lets go with a  Mexican theme! 
    Margaritas are a great way to start any party.  Whether you are blending or just shaking them with ice, you can throw together your mixture of tequila, other liquors and juices in a pitcher and just shake or blend away as needed.  
    Get creative with your margaritas too!  I’m all about using natural ingredients in my cocktails. With the seasons bounty of fresh fruits and veggies, why not make drinks with them too? 
    My favorite margarita is watermelon. All you have to do is blend up chunks of watermelon, strain out the pulp and seeds, or if you have a juicer, that’s even better. Then take the juice and mix it with tequila and triple sec.  Bare in mind, the better quality the tequila, the better the drink will be.  It’s often forgotten about, because you just want to buy the cheapest one on the shelf, but it really makes a difference. 
    My other favorite flavors are blackberry and cucumber-jalapeno. For the blackberry, you just muddle some fresh blackberries before you add the liquids in the pitcher. As for the cucumber-jalapeno, its a little more work. You can either try to find jalapeno-infused tequila or infuse tequila yourself, which you can do by de-seeding and chopping a few fresh jalapenos and adding them to a bottle of tequila that you’ll leave for about a week. The cucumbers you can juice or just use as a garnish. 
    Now, for the food… Margaritas go well with any kind of barbecue food, but they are complimented best by Mexican food. Why not utilize your barbecue by making fajitas?  Skirt steak and chicken are always staples for fajitas. I would recommend getting one of those grill plates with the smaller holes for the veggies, like peppers and onions, they are also good if you are doing fish on the grill. To top your fajitas, you can put out bowls of pico de gallo, and guacamole, which I’ve recently come to realize it’s the cilantro that makes a huge difference. Put out corn and flour tortillas, especially for those gluten-free friends. 
    This Memorial Day, break out the grill, and have a kick-off fiesta!

    Ladies and gentlemen…start your engines. Ever think about your body's engine? Consider this fact: your body loses 5 to 7 pounds of muscle tissue every decade of your adult life! Your muscles are like the complete engine of your body so think it terms of your body going from an 8- cylinder to a 6- cylinder to a 4- cylinder engine. 
    Although depressing you can combat the body's loss of muscle tissue through strength training. Please, don't worry as we are not talking about spending hours in the gym grunting and sweating bullets. Muscle development depends more on the intensity of the exercises than then the amount of time working out. The benefits can be derived with less than 30 minutes of strength-resistance exercises for two to three days per week. 
    Due to the natural loss of muscle with aging, your metabolism decreases by as much as 5% every decade of adult life. Therefore those calories 'burned' to maintain the body's function now go into fat storage. Not good. The good news is that research shows that you are never too old to replace muscles tissue. Also, as you add muscle you automatically increase your metabolism.
    Research on men and women over the age of 50 showed that by adding 3 pounds of muscle onto the body produced a 7% increase in the resting metabolic rate. Therefore the increase in muscles mass "burns' more calories every day! Let's understand the other benefits associated with strength-resistance exercises. It reduces body fat. Many experts tell you to do more walking/running or cycling or elliptical workouts to burn more calories. 
    This type of endurance exercise helps however strength-resistance exercises can be more effective. It enhances your bones -weak muscles leads to weak bones and strong muscles leads to strong bones! Other benefits include improving your blood sugar metabolism; can maintain or improve your low back health and reduce arthritic pain.

“Photographs and Memories…”

     Ah, the times of our lives.  What beautiful thoughts reflected in the beloved songs of Jim Croce and Paul Anka.  (Now, I’m dating myself)!  It brings a tear to my eye and a surge of love to my heart, each time I hear these lovely sentiments.  It also brings a knot to my stomach, when I think of the countless, literally thousands of “photographs” I have taken over the years, and have yet to “develop”, “print”, “burn”, “sync” or even remember to place in a photo album (yes, they still exist) or scrapbook.  The task seems undeniably insurmountable, and I am always planning on doing it “sometime soon”, in the ever-elusive future.  
     Taking pictures has just gotten so complicated, these days.  It used to be that you purchased a roll or two of film (in a tiny canister), and if you loaded it correctly into your camera, you were lucky enough to snag an extra two or three shots (from the original 12, 24 or 36 initially promised).  Of course, without all the professional tricks of the trade our modern-day technology offers, you’d be lucky to score half the amount of good photos, as many would be blurry, over-exposed, too dark or unrecognizable.  You see, you had to wait until the film was actually developed to see the fruits of your handiwork.  You also had to pay for the whole kit and caboodle; good, bad or otherwise.  There was no such thing as editing, deleting, cropping or “Photoshopping”, etc.  Whatever was snapped was yours for the taking.  This served its purposes, however, in keeping the number of photos taken to a minimum, and therefore, the number of photos acquired, to the same.
     Today, of course, I feel like I’m living with paparazzi!  TMZ has moved into the neighborhood!  Everyone, but everyone is forever snapping pictures, with their ubiquitous phones, iPads, and all other gadgetry.  In my own home, I’ve been affronted by my daughter, emerging from a given room, holding her ever-increasing arsenal of technology.  She’ll ask me questions, while informing me the person on the screen is on “mute”, thereby unable to see or hear me, as I am caught, unwittingly, unloading the dishwasher, in my nightgown!  My heart goes out to all of Hollywood!
     Honestly, people, let’s get a grip.  It’s really a matter of less is more.  We don’t need to capture every nanosecond of living, just some of the truly memorable moments.  In fact, I would argue, if we all just took a few steps back and allowed ourselves the pleasure of savoring these moments, we wouldn’t need all the other technological bells and whistles to create the illusion that they exist.  Just as a bird in hand is worth two in the bush, I say, a treasured bunch of pictures in hand are worth a plethora of snapshots in cyberspace!

There are many products and companies out there that simply make traveling easier, less expensive, more organized and sometimes just more fun!  

1. A reasonably priced bag that does it all is the Kipling Alvar nylon bag. It’s cross body for added security, comes in many colors, and has lots of zippered pockets to safely store your passport and other important papers.  Kipling also sells matching nylon wallets and small pouches, that securely clip on to a “leash” inside the Alvar bag so you can keep your money in there without the worry of somebody pick pocketing your wallet without you knowing it. You can purchase the bag and the wallet at www.kipling-usa.com, many online luggage retailers, www.amazon.com or Macy’s.  

2. My vote for the best travel hairdryer comes from Brookstone and can be bought in the mall or online at www.brookstone.com. The “Ionic Dual-Voltage Travel Hair Dryer” is $45 and worth every penny. There is a  switch on the back that changes the voltage from use in the USA to overseas.  If you are going to Europe remember to flip the switch to 220V right before you leave or else when you plug it in your hotel room in Europe you will immediately blow the fuse there.. been there.. done that.  Never a happy moment when you have to call the front desk and tell them your room is dark. It perfect for use on your vacation as well as every day at home.  

3. One thing some travelers forget about when planning their vacations is where to park at the airport while they are away. A company that always exceeds my expectations is The Parking Spot. With locations at JFK and LGA this company takes the stress out of airport parking. You can go to www.theparkingspot.com and make your reservations online for no charge.  Be sure to sign up for their free loyalty club because you earn points with every park. They have printable discount coupons on their website, your AAA card provides a good discount as well. They even give weary travelers (that’s you) bottled water on your way out.

4. Looking to open a credit card that will give you points for your favorite hotel chain or airline? My favorite  website to find out the best way to maximize your frequent flier miles and for the best credit card perks is www.thepointsguy.com. On their Facebook page, in addition to the valuable benefits information, it also has incredibly interesting travel tips and first hand experiences to enjoy. Where else can you read a complete comparison of first class amenities among all airlines or which coach seats are the smallest?

Save Big With LED Light Bulbs

Answer:

Since 1982 I have been saying, “You can make a difference by just changing one light bulb in your home or office.” Yes, Energy Saving Compact Fluorescent Light Bulbs where around and saving money, energy, and our environment for those who were bold enough to evaluate, buy, and use them since 1982.

Today at GoingTrueGreen.com I am advocating the fact that now with LED bulbs joining Compact Fluorescent bulbs, it is practical for us to change all our light bulbs! By just changing light bulbs in your home or office, you will not only save yourself money, but also our environment for our grandchildren! 

If you are still using Standard Incandescent light bulbs there is one powerful fact you may not know. These Edison designed light bulbs will LOSE up to 45% of their light output with use. However, you continue to pay for the full wattage of the bulb!

For Example:

After a 100 incandescent watt bulb is on for about 420 hours (about 12 hours a day for 5 weeks) that bulb will lose light level and only "give off" or "put out" 55 watts of light!
Meanwhile, you still pay for 100 watts of electricity! Then after 750 hours or about four weeks later, the bulb will burn out!

This is why when replacing a burned out bulb, the new bulb of the same wattage is much brighter than the bulb that just burned out!

Another “kick in the rear:”
With Edison’s 1928 designed incandescent bulbs, they are most inefficient product designed by mankind. Out of the 100% of electricity used to operate the incandescent bulb, 90% generates heat! Only 10% of the electricity consumed produces light!

Savings:
Energy saving fluorescents will lose ONLY 15% of their light output over their much longer life which is about 2 1/2 years when on 12 hours a day. Fluorescent bulbs realize up to 71% savings in electricity and energy, while LED bulbs will save around 75% as they last twice as long as fluorescents.

5th Annual Montauk Memorial Day Parade

Off Route 27, Montauk
The town of Montauk and its patrons are coming together to bring the 4th annual Memorial Day parade.  The march will begin at Kirk Park and will move east through town, ending on the Village Green paying tribute to troops in the US Armed Forces.  After, pack a picnic and spend the rest of the day outdoors at the local state park.

Black Bean Salsa:
~ 1 Can Black Beans
~ 1 Can Corn
~ 1 Avocado chopped
~ 1 Tomato chopped 
~ ¼ Red Onion chopped
~ ¼ Cup Red wine vinegar
~ 2 Tbsp. Olive Oil
~ Salt & Pepper
~ Clove Crushed Garlic

Mix all ingredients except avocado together and chill. When ready to serve, add avocado and mix gently.  

Red, White & Blue Sangria:
~ 1 Bottle of White sweet wine
~ 1/3 container of Apple Cherry fruit juice concentrate 
~ 3 oz. Blueberries rinsed
~ 3 oz. Raspberries rinsed
~ ½ pint strawberries de-stemmed & quartered

In a Large pitcher, pour wine and fruit concentrate and stir.  Before adding fruit to pitcher combine in a bowl and mix so fruit juices are formed.  Pour bowl of fruit with juices into wine mixture and stir.  Serve Chilled.

Dessert: Berry Delight
1st Layer – 
½ cup graham cracker crumbs
¼ cup sugar 
5 1/3 tsp. butter 
~Melt Butter, add crackers and sugar.  Press into bottom of a Springform pan or glass bowl.    

2nd Layer –
8oz. Cream Cheese
¼ cup sugar
2 tsp. milk (whole or 2%) 
1 ½cup Cool Whip
~Mix cream cheese, sugar and milk until creamy and smooth.  Fold in Cool Whip until creamy. Add a layer of graham crackers.

3rd Layer –
2 cups Strawberries cut into half or quartered.
(you can also 
incorporate raspberries and blueberries).  
Add to 2nd layer

4th Layer –
2- 4oz. Boxes Vanilla Pudding (No Instant!)
3 1/4 cup Milk
Cook pudding until boil and add on top of 3rd layer.  Place in fridge overnight. When ready to serve cover with rest of Cool Whip and Fruit. 

Buffalo Chicken Mini Bites:

~ 8 oz. Cream Cheese softened
~ 1 oz. package of ranch dressing mix
~ ½ C. Dairy Sour Cream
~ ½ C. Cooked Chicken Breast, finely diced
~ 1/3 C. Celery, finely diced
~ ¾ C. Shredded Sharp Cheddar Cheese, divided
~ 30 mini Fillo Shells (about 2 packages)
~ 1/3 C. Buffalo Wing Sauce
~ Spring Onion Sliced

Preheat oven to 350 degrees.
In a medium bowl, combine cream cheese, dressing mix, chicken, celery and ½ cup cheese.  Spoon mixture into Fillo shells.  Top each with wing sauce and sprinkle with ¼ Cup of remaining cheese. Bake at 350 degrees for 5 minutes. Remove from oven and sprinkle with sliced spring onion.  Serve immediately.

Sometimes it’s Better to Be a Big Fish in a Small Bowl than a Guppy in the Ocean

It would be hard to dispute that your performance is the number one driver, but a close second is the impact of your performance and organizational visibility.  Throughout your career, constantly evaluate your organizational visibility. If you feel it’s low, either come up with a plan to raise it, or consider making a job change to become a big fish in a small bowl. Your career is like a billboard-if your talents and success are not visible and publicized only you will know about them.

Be Extremely Well Informed About the Economics of Any Job Change 

So, you get a job offer and it seems like you will improve your financial state. Before you accept the offer, whether presented verbally or in writing, dig deep into the financial side to make sure that you are really making the compensation progress you’re salivating about.

• Ask questions about your pre-tax contributions to all employee benefits and what they are forecasted to be at the next open enrollment period. Don’t become enamored by having recruiters or hiring managers tout their benefits program. Let’s face it, no one will tell you theirs stinks! Get a handle on what you’ll be paying.

• Find out about how the organization handles employee evaluations and when you will be eligible for a salary increase. Find out what might shift your date of eligibility, such as an extended absence, or what could exclude you from eligibility. If you’re in a job where you have the opportunity to earn incentive income or a bonus, dig deep to get the specifics.

• Make sure you know what types of business related expenses you’ll be reimbursed for and if you will have a company provided credit card. Don’t assume that everything is covered. You’d be amazed by many of the things you automatically think are covered are not.

Great careers can be built through great career management. Give yours the attention it deserves!

Memorial Day~What better way to spend 3 glorious days celebrating, spending lots of time outdoors, feeling grateful, and truly enjoying the sights and sounds of the sea.  Eating fresh food from the Sea is~ the plan for me!  This red white and blue holiday weekend is the perfect time for parades, picnics, barbeques, reunions with family and friends, and our patriotic spirit! Somewhere right in the middle of this 3-day weekend ~I like to to enjoy the Sea. A bit too cold for swimming~ Fishing? Maybe?… Or just go to your local fish market and buy some fresh seafood. They did all the catching and cleaning for you! All you need to do is make this recipe for a delicious broth to cook some clams, mussels and shrimp~ grill crusty bread, pour a glass of wine~ invite your favorite people, find your time in the sun~ eat outdoors and fly your flag in the breeze! ahh…. La Dolce Vita! “ the sweet life” Take time to honor the brave men and women who have served and died in our country’s military services ~ without them we wouldn’t be free …or have the sweet life.

To Serve 4
3 lbs of washed fresh mussels
3 dozen washed little neck clams
1 ½ Lbs of large prawns or shrimp
1/3 cup chopped leek
1/3 cup chopped shallots
8 ~10 garlic cloves minced
¾ cup fresh chopped basil
1 cup chopped fresh parsley
1 bay leaf
1 t red pepper flakes
Salt and fresh ground pepper
1 can of hand crushed 
      San Marzano tomatoes
½ cup or more of extra virgin olive oil
1 cup white wine
1 bottle clam juice
1 bottle lobster juice

Sautee in a large deep pot~ leeks and shallots in olive oil until soft. Add garlic and dry spices for 1 more minute. Add wine bring to a boil, then lower and add tomatoes, and cook on low for 20-25 minutes. Add fresh herbs, juices, and clams. Cover for 10 minutes or until shells open, then add mussels, cover pot for 5 minutes, then add shrimp for 1 .5 minutes or when they are pink. Done. Bring pot outside, dip, scoop and enjoy!

Why is “Anti-Freeze” In Our Food?

    Propylene Glycol (PG) is a colorless and odorless chemical compound commonly found in anti-freeze.  It is also commonly found in ice cream, cake mix, flavored ice teas, soft drinks, icings, salad dressings, processed foods, food flavorings, cosmetics, shampoos, conditioners, lotions, deodorants, baby wipes, dog food and more.  PG is used at different strength levels in different products and is in part used in food to help prolong shelf life.  It is also used in food to maintain flavor, moisture and texture.  In that PG is widely considered to be a toxin, it is generally banned from use in food in the European Union.  In the United States however, the omniscient FDA says it is safe.
    The FDA maintains that it is safe for the American people to ingest PG at the "low" levels used in our food.  The FDA also says it is safe in dog food, despite several class action law suits claiming that PG has caused illness or death in thousands of dogs.  Ironically, the FDA has declared PG to be unsafe in cat food and has actually prohibited the use of PG in cat food.  Apparently PG in cat food was found to result in a disorder called Heinz body formation.  Heinz body formation was found where small protein clumps developed in red blood cells, with long term cellular damage.         In humans the side effects of PG may include conjunctivitis, rash, irritation, burning, and possible organ and central nervous system damage.  Notwithstanding, the FDA maintains that the low levels of PG in our food, in and of itself, does not pose a significant threat to our health.  That's almost tantamount to saying that eating a little bit of poison won't kill you.  One thing is for sure, eating a small amount of poison or something that is toxic is certainly not good for you.  
    Even if we accept the premise that the levels of toxicity of PG in our food are too low in and of itself to cause any real harm, what about everything else?  Almost all of us are exposed daily to some level of toxicity from the food we eat, the water and other beverages we drink, the mattress we sleep on, the soap and detergents we use, the clothes we wear, the home we live in, to the air we breathe.  After all, it is the cumulative effect of all our toxic exposure that leads to poor health.  
    Many of these things are unavoidable and beyond our control in today's modern world.  In consideration of that fact, perhaps the FDA should take a page out of the European Union's book and focus on what we can control.  We can and should control what we allow to be in our food and not sacrifice the health of the American people in the name of profits derived from longer shelf life.  The old computer maxim remains true to this day, in that if you put garbage in you will get garbage out.

Indoor or outdoor plants are another longer-lived option. Remember, if Mom has pets in the house, be sure to check on the safety of certain plants and flowers for her four-legged babies.

Before walking in to the store, try to have an idea of whether she prefers vanillas, florals, etc. What about a basket of scented bath products, including bath bombs, shower gels, lotions and sprays.     For the mom that has it all, treat her to a wonderful experience for her to remember. How about tickets for a local playhouse with dinner, a spa day, a night at a wine and cheese or wine and chocolate pairing, a game featuring her favorite team, a package of yoga classes, dance classes, tickets to a ladies night featuring wine and painting, appetizers and a concert and many more.  What is the activity she would most like to do? That’s the certificate she should find when she opens the box.
    Handmade cards and gifts from my children are simply the best. Take a moment and write a letter to Mom and tell her what she means to you.  Include that note with the gift of your choice, and you are sure to give her a Mother’s Day to remember. But, remember, she is your mom….call her often, tell her you love her always, and make sure she knows how special she is 365 days per year.
