St. James Public House

    Opening on the north side of town in St James comes a new restaurant that redefines what American comfort food is all about. What was once the hitching post for several restaurants over the last two decades, St James Public House challenges the odds with their innovative and trendy eatery. But that’s not all. At the helm of the kitchen is Chef Al Hand. A graduate from Johnson Wales,  Chef Hand has been in the food biz for 35 years and has put together a creative menu that is cutting edge with a twist on several traditional American offerings.
    Completely renovated, St James Public House is quickly creating “the buzz” with the locals and those outside the immediate area. As you enter, you’ll find an inviting bar with over-sized booths that can handle 6 people with ease. If you don’t like the bustle of the bar scene, the lower level of the restaurant lends itself for a more traditional dining setting.
    The menu is packed with over 20 appetizers, soups and salads. Your biggest challenge will be to decide what to try, as it all looks so amazingly good. Satisfy your craving by going with a group and share a bunch of apps, like the “Baked Local Oysters. Four Blue Point darlings stuffed with spinach, plum tomato and gruyere cheese, laced with Applewood bacon, then topped with butter panko bread crumbs and Beurre Blanc. Three words: Plump, Savory, Incredible! The “Asian Duck Wings” was a first for me. Crescent Farm duck wings, tossed in a sweet and spicy Asian glaze, then dusted in black and white sesame seeds. Emulating traditional chicken wings, the real innovation comes from the wasabi sour cream, replacing the traditional blue cheese dressing. Fried till crispy, fall off the bone goodness is what best describes this appetizer.
    For our mains, we went for a fish and meat selection. The “Crab Encrusted Salmon”, prepared with lump crab meat, baked, then drizzled with Beurre Blanc was served on a bed of lemon scented basmati rice, complimented by fresh grilled asparagus. This is the Scottish Salmon variety, which means it’s not farm raised. The Beurre Blanc mingling with the rice gave it a kind of silky texture. A large portion, fresh and full of flavor.
    We also shared, the “Braised Short Ribs”. A generous portion of tender fall of the bone beef ribs, simmered in red wine with root veggies and mushrooms, served atop creamy polenta and sautéed fresh baby spinach. You want American? You got it! Bountiful and savory. The topper is how the sauce of the red wine and natural juices of the meat infuse the polenta, making this entrée a wonderful treat! 
    St James Public House’s upscale cuisine is making its’ mark as a restaurant that I am certain will stand the test of time.

Whether you’re planning a big night out or you’re keeping a warm cozy quite night inside in mind, it is truly your moment to brighten the night.
     Silver sequins were made for New Years Eve. However, 2017 designers are sprinkling champagne hues on their sequin dresses and it is breathtaking. The color gives promise and hope for peace in the New Year. Perfect for a night behind the velvet ropes, true vintage glamour.
     Navy sequins will turn heads all night this new year. A Montclair cap sleeve dress will always prove to be on trend.  An illusion neck, sophisticated enough for formal or a style that’s chic and easy.  The sequins will catch and reflect the light, and you will not go unnoticed.
    So you’re looking for a change? Movable embellishments including oversized sequins, gold hardware and a plunging neck line. You’re in luck. Think outside the dress, and opt for a jumpsuit instead. The one-piece style is totally relevant for ringing in the New Year.  Backless or a plunging front with a billow pant is a diamond choice for the evening. Try red and turn the heat up.  
     If sparkles are not your thing, pull out your sexy little black dress. There are many ways to dazzle it up or remain low key.  A statement necklace, a chunky cuff, or even a red lip, can make all the difference here. Try finishing off with an ankle bootie and a faux fur motto jacket.
     If you’re planning a low key evening at home, dinner with friends or family. Don’t ditch the glitz altogether. Wear those favorite skinnies but pair them with a sparkled blazer and tee. Try a velvet smoking jacket with a graphic tee underneath. A feathery vest or a faux fur vest is another fun alternative. Top with a gold or silver choker and you’re set. If you have a pair of sequin leggings, this is the night! Throw them on with your favorite oversized sweater and a pair of velvet loafers.  
     Embrace a new chapter in life while reflecting on the past chapters. Light up the party and be the shining star you are. Grab your glass of bubbly and toast to new hopes and the past blessings.

May your horn flow with plenty of gratitude, with an endless supply of this tasty Italian Cornucopia delight (Cornu~ means horn and copia means plenty). My loving  newlyweds are feeling happily married and ready to take on the Holidays with an abundance of overflowing deliciousness. When at home together and not working in the hospital this Dr. and his bride nurse are quite into entertaining this season, wowing the boots and hats off their Texan guests~Italian style! I am impressed how they are also enjoying the gift of sharing love with culinary delights. This horn of plenty elevates ordinary pizza dough into an elegant and whimsical holiday dish. They certainly received Dishin’with Denise’s*** RAVE reviews! Go ahead and build a better cheese platter, A celebratory one, fill it to the brim with abundant tidings and good cheer~observe the love flowing out.  I am grateful this newly married couple are learning early on that creative ideas in cooking punctuate every festive moment of the season. •    Fold a 30×18” sheet of heavy aluminum foil in ½ and roll to make a cone. 
•    Stuff the inside body with crumpled foil to fill until rigid, make the tail of cone by adding additional pieces of foil.
•    Roll a sil pat (silicone pastry mat) around the foil cone and secure the sil pat with rubber bands.
•    Place dough on another sil pat mat. Cut stretched out 3 Pillsbury canned pizza dough’s into 3 lengthwise sections. (can buy 4 cans if needed) Slowly roll the dough into elongated strips. Begin by wrapping the thinnest long roll of dough around the bottom of cone, save tail for last.
•    Continue spiral wrapping the cone ~ tucking ends into row below it, wrap the tail last. Use the last 3 strips of dough to make braid, pinch together at top and braid. Place braid on outside edge of Cornucopia opening. 
•    Brush entire roll with egg wash (acts like glue) Bake at 350 degrees for 45 minutes or golden brown. Remove from oven, let cool completely, and then gently pull foil out of horn. Remove from sil pat and the mat. Allow to dry for 1-2 days… Now, use your imagination & chop up bite size pieces of all varieties of Italian cheeses, mozzarella balls, Italian meats, hard salami, prosciutto, ham, mortadella, olives, roasted peppers, cherry tomatoes, a drizzle of olive oil, basil leaves for garnish and sprinkle with salt and fresh ground pepper.  Pour a glass of wine! YOU DID IT!

 

Destination NYC For The Holidays

    Rockefeller Center Ice Rink and Rock Center Café.  Bring the whole family to skate and then dine at Rock Center Café right in view of the 94-foot Norway spruce from Oneonta (www.therinkatrockcenter.com). The Café is New York’s American Grill bringing chef-driven cuisine at breakfast, lunch, dinner, and brunch.

    On Broadway.  There are many shows to choose from this holiday season. Festive New Year’s Eve Cocktails and Appetizers

My husband and I love hosting a New Year’s Day get together. We’ve started a tradition that everyone gathers by our house around 2 p.m. for light appetizers and tasty cocktails. It’s the perfect day to kick up your feet, wear comfortable clothing and enjoy family and friends. But, the night before we usually attend a friend’s New Year’s Eve house party.  I like to bring an appetizer that’s light but still somewhat filling since guests will be celebrating into the wee hours of the morning. My go-to party appetizer is Caprese Bruschetta. What I love most about bruschetta is you can make it ahead of time and there are so many different takes on what you can top your crisps with. Here is everything you will need to prepare your appetizer. 
    Pour eight ounces of balsamic vinegar into a small saucepan and heat over low to medium heat until the vinegar starts to simmer. I like to let it heat for about eight to ten minutes. Once the vinegar starts to thicken and reduces to about four ounces, turn off the heat and pour your vinegar into a bowl to let cool. Ultimately your vinegar will begin to turn into a glaze. Set aside and prepare cutting two cups of cherry tomatoes into halves. Once done, set aside and slice eight ounces of fresh mozzarella into small cubes. Take about two tablespoons of fresh basil and roll and chop into fine strips. I also like to add half of a red onion finely chopped for some added bite, but feel free to leave out. Combine your tomatoes, onions, basil and mozzarella in a bowl and toss together. I like to use a fresh baked baguette from my local bakery and slice into as many pieces as possible, usually an inch thick. For added crisp you can toast your bread on 400 degrees on a baking sheet and lightly brush with extra virgin olive oil for about ten minutes. Lay your crispy bread on a serving platter and top with your bruschetta then drizzle with your balsamic glaze. I like bringing the mixture separate from the bread and topping once I arrive to my destination to keep the bread warm and crispy. 
    A nice cocktail to pair with your appetizer is prepared with prosecco. What’s New Years Eve without a little bubbly after all?  My favorite cocktail to make during the holidays is a Champagne Punch Bellini. It’s a little sweet, a little tart and perfectly fizzy! You’ll need one bottle of prosecco, one cup of vodka (I prefer Sky for this recipe), half of a cup of raspberry sorbet and fresh raspberries for garnish. Mix together prosecco and vodka in a bowl. Prepare your champagne flute by scooping one tablespoon of sorbet into each glass. If you aren’t a raspberry lover, feel free to choose your favorite fruit or flavor instead. Fill your glasses with your prosecco and vodka mixture and garnish with a few fresh raspberries and a sprig of mint for bite! Don’t forget to cheers your fellow guests!     Admissions officers rank extracurricular activities high in their criteria for college entry, particularly within the elite schools. The general impression is that they value dedication, sustained participation, and advancement within the selected extracurriculars. More is not necessarily better. Rather, reaching the highest level of participation, i.e. president of student senate, captain of a sports team, 1st violin in orchestra, carries recognizable weight in the admission's formula. The general attributes associated with the activity play a larger role than the activity itself. In other words, taking on a leadership position or showing marked advancement within an organization represents stronger value in assessing extracurricular involvement. 
    Not all students need to show depth of participation in extracurricular activities. For example, scholarship athletes may need only show their success within the sport they engage in. Student's with significant financial need may substitute external work experience rather than display extensive in-school extracurricular involvement. Band members who advance from 3rd to 1st position in their instrument identify dedication and commitment. Generally speaking, within the standard applicant pool, admissions officers look for productive and meaningful contributions within an activity.
    Extracurriculars that allow students to differentiate their participation appear to carry additional weight. Reaching the status of president of a group, being the captain of a Chess Team, standing out amongst the other participants and evidencing growth over time lends importance. Taking a role of responsibility and standing out amongst your peers conveys a drive to engage within an organization and contribute to its success. Strong extracurriculars may compensate for weaker academics, but are not a replacement for having a well-rounded academic and supplementary profile. Not having any extracurriculars  handicaps an application and leaves a candidate exposed to competition that displays a more varied experiential background. Finally, colleges eagerly seek to fill the clubs and organizations they've established on campus. A well-rounded set of extracurricular activities points to a potential participant within the college setting. 

 

Peace, Comfort, and Joy


Maria DiGiorgio is a lifelong New Yorker, who currently resides in Commack, with her family.  She is a devoted wife and mother, an educator and designer. Maria

     At this time of year, when holidays abound, many people look to embrace the glee and the celebration of life, family, love, and tradition.  For many others, there is a painful reminder of loss, fear of the unknown (when looking ahead to the new year), and trepidation, in general, as they approach the uncertainty of each new day. Our world is a deeply troubled one.  Our spirits reflect this on a day-to-day basis.  We struggle with all kinds of issues, and this struggle can wear away at our resolve to live peacefully, mindfully and with comfort and joy.  We may wish to incorporate these ideals into our daily existence, but the weight of our worries and the turmoil we may be feeling, is likely to overshadow our instincts. 
     One way to counteract this sense of negativity is to combat it with a strong sense of purpose.  Having a clear and attainable goal is paramount in this endeavor.  We all too often fall victim to the pressures this time of year brings, the unrealistic expectations, the financial burdens, and so on.  We need to take a few moments each and everyday, to stop, breathe deeply and assert a specific goal we would like to accomplish, for just that day, and no other.  For instance, if we know we would like to enjoy the company of friends or family, then we commit to doing that, for just that particular day.  We arrange an outing to a favorite place for dinner, coffee or shopping.  We make a concerted effort to be present in the moments we share and to mindfully embrace the joy and comfort we feel throughout our time together.  We allow ourselves to savor these precious moments as they unfold and as they become sweet and treasured memories.
     With each day, we resolve to set a new and attainable goal.  By doing so, we are forced to take inventory of the things that matter most to us.  With successful completion of our goals, we develop a personal confidence and sense of inner peace, which in turn, enables us to further combat the frantic pace of the holiday season and to truly be present, (mindful) in the process.  Our newfound serenity will naturally flow into our daily lives and the lives of those around us.  We will be astounded by the amount of joy we can cultivate and the delight we can derive from a time of year that can be so counterintuitive to what it is truly all about!

Raccoon Attack

    A few weeks ago I was on the New York campus of St. John’s University for my speaking engagement when I saw Ross, a good friend and professor. Our discussion ran the spectrum from the Shroud of Turin to String Theory, like all our usual conversations. However, this time, our focused settled on how to deal with raccoons! The topic came up because my friend recently discovered a raccoon living in the rafters of his unconnected garage,that he converted into his studio. The discovery came about after seeing a continuous and growing amount of destruction about the room. First he saw that his tools were disrupted and a few days later found his studio asunder.
    Not wanting to cause any harm to the animal we were talking about how each township has their own set of rules and laws when dealing with undomesticated animals such as squirrels, possums, and raccoons. One popular rule is how we are not allowed to trap, transport and relocated the animal elsewhere, even if that area is a protected park or forest.
    So the question remained about what is the best way to move a raccoon out of one’s garage. Exactly at that moment we heard, “Good day gentlemen.” Lou, another good friend and professor was passing by and joined the conversation. Turns out that Lou also had raccoons living in his back yard studio and he immediately injected the answer: Talk Radio.
    Turns out when you leave a radio on, that is tuned into a 24 hour talk radio station, the continuous sound of humans talking keep the raccoons on alert all the time. So after a few days or so of non-stop human talking, the enervated raccoons will leave to find more suitable living quarters. Then at that point of our conversation, Lou had to leave to teach a class.
    I then discussed with Ross that once he ascertains that the Raccoon had moved out, he had to find the entry point and seal it up. Thus avoiding any new destructive and non-paying tenants.
    Having unwanted animals move in, is not an uncommon event, especially when winter winds start blowing and you have older buildings located by a park or woods. Thankfully Lou knew the solution, one which I learned about 15 years earlier and neglected to remember. I just started teaching part-time at BOCES for Outdoor Education and one of our classrooms inside a stable had a terrible odor of urine inside. I was told that we had a family of raccoons living in the rafters. The following week, I arrived early in the morning to set up the classroom ahead of time and found inside an old battery operated radio playing an all talk station. I learned a few weeks later that our uninvited guest moved out.
    I hope sharing this information proves helpful for some of my GoingTrueGreen.com readers and visitors. Bottom Line: There is always another way.

 

Dishin With Denise… Tasty Toasts!!! …To Holiday Entertaining

    On the first day of Christmas…my true love made for me a crostini …in a PEAR TREE! Balsamic~ Glazed pear and Goat cheese Crostini’s. Simply Delicious! The Holiday Season is upon us and entertaining is in full motion. This easy to prepare appetizer will surely be savored by all. An amazing drizzle of a buttery balsamic ~ honey glaze on fresh pears sliced a top a crisp crostini that is spread with creamy goat cheese, toasted slivered almonds finished with ground fresh black pepper.  Go ahead and ~ Pear up your friends and family to share these tasty bites …Keep the drummers drumming…the pipers piping and the birds calling!!! 

    Remember…when you create and prepare food ~ you are really preparing ~“TO GIVE” and  (You just can’t …out give a giver!) Feels GOOD~like…“Lord’s a Leaping!”

2 ripe, firm pears
3 T balsamic vinegar 
1 t honey
1T butter
½ cup or more of soft goat cheese 
½ cup of toasted slivered or sliced almonds 
Fresh ground black pepper (as desired)
24 baguette slices toasted

    Slice the pears stem side up into 12 ¼ inch width vertical crostini slices. In pan heat vinegar, butter and honey over med heat for approximately 2-3 minutes stirring until thickened. Add pear slices and toss to coat quickly, Spread goat cheese on crostini slices and top with 2 pear slices, drizzle remaining pan glaze over pears, sprinkle with almonds and top off with fresh ground pepper.
