Growing Popularity Of A Plant-Based Diet

Dr. Oz says a vegan diet is the big movement of 2017.  Let’s take a look at the vegan diet, do some myth-busting, and get to know some local eateries that are serving up creative and delicious plant-based fare. 

What exactly is a “vegan diet”?
A vegan diet is exclusively plant-based and includes vegetables, beans, nuts, grains, seeds, and fruits.  However, some vegans will eat honey.  

What are the benefits of a vegan diet?
According to the American Dietetic Association, a vegan diet is able to meet all nutritional requirements.  The Physicians Committee for Responsible Medicine advocates for plant-based diets in light of scientific research, such as the highly respected China Study, that has found the vegan diet beneficial for cardiac health, reversing coronary disease, and reduced risk factors for many other serious illnesses. Add to that the cache of celebrities “going vegan” for its slimming effects, and we have a bonafide movement in the making!

How do vegans get enough protein in their diet?
It is a myth that a diet must include animal foods to supply adequate protein. In fact, all plant foods contain some protein, and a varied plant-based diet will provide the essential amino acids necessary for health.  

Can vegan cuisine satisfy a gourmet palate?
The answer is a resounding, “Yes!” In addition to the plethora of vegan cookbooks on the market, there are many local restaurants and shops prepared to dazzle the most discriminating foodie. Here are a few for starters:

The Spring Fling

    No – it’s not a dance or a party.  It’s just my way of saying it’s time to take that ball (all your clutter) and head it toward the goal post or basket – a big basket (I fear your wastebasket isn’t big enough).  Super Bowl is over and your guests may not be coming back until Easter or Passover, but look at the calendar.  How much time do you need to get your house in order? 
    In January, I had small group sessions on clutter control in our Uniquely Natalie shop.  These were even more helpful than the larger seminars because people were able to open up and share and the group, as well as myself, could be supportive – in a tough love way.
    But cleanup is only the first order of business.  The next is to take an assessment of the physical needs of your home – the roof, air conditioning, appliances that are on their way out and other items that might not look like you are “decorating” but can build up to big ticket numbers if left unattended.  The garden cleanup is another project that needs attention by you or others.  In short, your home can only take care of you if you take care of it.
    Now for the old and tired furnishings.  Are they going to be replaced, reupholstered, used as place holders?  Is the floor plan a good one for your home and your lifestyle?  Can you benefit from a re-assessment of useable space?  Is this the year you are going for a major renovation – kitchen, bathroom, extension?  As always, the first action needed is a plan of action.  It shows intent and can be backed up by doing research to create a viable budget for your wants and needs.  So far, no money has been spent, but the time you spend to do your planning can save you lots of money – and stress, as well.

•    Think out of the box and maybe out of your comfort zone.  Check out the internet and magazines for design and renovation ideas that appeal and see if some can work for you and your home. 

•    Would you consider a fresh coat of paint to enhance your existing furnishing?

•    Are your window treatments dated and too heavy?  Try removing most of them, leaving just the sheers, or putting up new sheers to let light and spring in?

•    Would new accessories refresh or is it time to clear out the display cabinets and leave only what you truly love so people, as well as you, can actually see these items and enjoy the view?

NHL Trade Deadline

    The NHL trade deadline comes and goes every year. Contenders use this day to bolster weaknesses as contenders use it to prepare for the future. Either way, the day always shapes up to being an exciting one for fans across Canada and the United States.
    This year, both New York teams are in slightly different positions. The two teams being referenced are the Rangers and Islanders. The Rangers, as of right now are on pace for another playoff berth and look to bolster their lineup before playoffs roll around. The Islanders got off to a poor start this season leading to Jack Capuano’s reign behind the bench ending after six seasons. The Islanders have rebounded though under interim coach, Doug Weight.
    The Rangers pull up to the deadline in need of a puck moving defenseman, preferably, one that is right-handed. Those are not easy to find in today’s NHL. If teams happen to have them, they rarely want to move them because they are so hard to come by. The Rangers have been linked to Blues defenseman, Kevin Shattenkirk. Shattenkirk, 28 is putting up a career year in St. Louis in a contract year. He is a New Yorker and it has been reported that he wants to be a Ranger. The Rangers have the forwards to contend for years but with an aging defense and franchise goaltender turning 35 soon, the time to go for it is now.
    New York Islanders fans came into the summer feeling great, as did the organization. They had just won their first playoff round after 23 years. They defeated the Panthers in the first round in six games on a John Tavares double OT winner. They did have decisions to make on some key free agents. After years with the organization, the Islanders let core guys like Kyle Okposo and Frans Nielsen walk to other clubs. The Isles started the season poorly. Andrew Laad, who was signed to a hefty contract over the Summer looked like a bust. Once Weight took over the Isles turned it around and are pushing for a final playoff spot.
    There are teams that on deadline day will look to upgrade. Those teams are: Chicago, Minnesota, Los Angeles and Anaheim.
    Teams not looking to upgrade will sell off any rentals or players they expect to leave via free agency for future draft picks or prospects.
    The playoff push is here, and it is shaping up to be an exciting one.

 

Come Home To The New Coliseum

    Anyone driving down Hempstead Turnpike in Uniondale has watched the evolution of our beloved Nassau Coliseum. As renovation occurred a 416,000-square foot upgraded and modernized venue emerged. Its sleek and contemporary new look includes iconic Long Island symbols like beach dunes, decks and boardwalks. The revitalization has Long Islanders everywhere waiting for opening day on April 5th.
    The new arena boasts redesigned concession stands, double the number of restrooms, ADA seating, charging stations and even party seats. At capacity, the theater will hold 4,500 patrons, concerts holding 14,500 and sporting events ranging between 13,000 and 14,000.  A new pedestrian walkway will allow visitors to navigate the arena easily and add to the overall experience. The coliseum will also feature terrazzo flooring and sustainable fixtures throughout.  The $130 million renovation project touches each corner of the Coliseum.
    On Wednesday, April 5th our own Billy Joel will host the opening show with Stevie Nicks and The Pretenders following on April 6th. Other entertainment scheduled include Idina Menzel, Marc Anthony, WWE Monday Night Raw, Monster Jam, Barbara Streisand, Metallica, Bruno Mars and Roger Waters. There truly will be something for everyone! The Nassau Coliseum will also host hundreds of annual events including concerts, family shows, college basketball, hockey, MMA and boxing. Also scheduled are many outdoor festivals that take advantage of the Islands warmer months. The Long Island Nets and Brooklyn Boxing will call the Coliseum their home in 2017.
    The venue will feature the rich culinary flavors of Long Island through its Long Island Taste program, which incorporates local dishes and ingredients from vendors across the island. Guests will also experience best-in-class customer service as all Coliseum employees will be trained by the Disney Institute. A Long Island All Access Pass will be offered as an annual season ticket membership that will include a VIP entrance and club and tickets in the lower bowl at all events. The 4,152 square-foot VIP club will feature two large bars and custom seating. The event-level lobby will offer a gathering space for fans with expanded food and beverage selections.
    Whether singing along to Piano Man, cheering on Chris Jericho, getting lost in Nothing Else Matters, eating gourmet Long Island food or having a drink with friends the new and improved Nassau Coliseum is a location that must be experienced.  Fans looking to see all of the programming coming to the new venue can find more information at www.nycblive.com

Vienna, Austria And Other Famous City Day Trips

My partner and I have decided that Vienna would be the perfect city to visit as well as other nearby European cities as it offers the foothills of the Alps and is on the banks of the Danube. We’ve found that autumn traveling is priced best. Here are some top destinations (www.planetware.com/Vienna):

• Vienna Highlights. The Hofburg is an historic palace spanning 59 acres and architectural styles from the Gothic, Renaissance, Baroque, and Rococo movements. It includes 19 courtyards, museums, chapels and the like.  St. Stephen’s Cathedral is a 12th-century Romanesque church. Highlights include climbing 343 steps to Steffl’s Watch Room for stunning views. Schonbrunn Palace and Gardens (18th century), Baroque designed, boasts a park-like setting. With 1,441 rooms and apartments, it includes those once used by Empress Maria Theresa. The Vienna State Opera House, home to the Philharmonic Orchestra, has hosted many of the world’s most prominent composers, conductors, soloists, and dancers.  Beethoven’s Heiligenstadt is where he worked on his Second Symphony and is now a museum.

• Budapest. About 150 miles from Vienna, it’s affectionately known as the “Paris of the East” as it sits along the Danube and is one of the most picturesque cities in Europe. Take in the UNESCO World Heritage Sites, the Baroque to Neoclassical and Art Nouveau architecture, Castel Hill, home to the 18th-century Buda Castle, Heroes’ Square, and many museums.  The Budapest Day Trip takes you to many of the cities famous landmarks. 

• Salzburg. For classical music lovers, Mozart’s Birthplace is one of the most popular museums. Visit Mirabell Palace and gardens, where the famed Von Trapp children ran about. Take a walking tour of the city from the Residenzplatz, the large square and home to a magnificent marble fountain by Italian sculptor, Tommaso di Garone. 

• Bratislava. Slovakia’s capital is less than an hour from Vienna by train. Here old meets new in this striking city where 18th-century buildings line the streets of the old town and Soviet architecture can be seen. Visit Bratislava Castle, the old town hall, which houses the City Museum, and Michaels’ Gate from the original medieval fortifications.

• Prague.  It’s about 180 miles from Vienna. Begin at the Old Town Square for a walking tour where you’ll pass the famous Tyn Church and the Jewish Quarter. Other sites include the Prague Castle and Old Royal Palace. Stroll across the Charles Bridge or see a performance at the National Theatre. The 14-hour Prague Day Trip passes through the Moravia countryside.

    The athleisure trend goes well beyond a pair of simple black leggings. The fashion industry has taken the trend to new heights. The major position that your leisure post yoga, weekend wear legging has now earned in our everyday wardrobe has become increasingly “staple” status.
    Bold whimsical prints are on their way out. We are seeing more subtle prints getting stronger. What have been really hot on the runway are street tough details like panels, distressing, mesh fabrics, and geometrics. The more mesh the better. Compression tight, paired with a cool graphic T-shirt or an oversize tunic, layered with a denim jacket or a motto jacket for a great post gym look.
    It can be tricky figuring out which styles are actually working best for our bodies. Since these leggings were designed for a practical purpose (of breaking a sweat) we now have to consider the “off duty” staple look fabulous and flattering outside the gym.
    Generally we see petite, curvy, or an athletic build in the most common body types. Feel confident to associate with which ever suits your general body type. An apple shape figure for example, both crop and long leg styles work for your shape. Staying away from prints and incorporating mesh in your detailing of the lower leg to take it up a notch. So we are taking the eye down. That’s the key here, away from the stomach and waist area.
    Hourglass, go for the high-rise. Perfect the higher cut slims at the midsection. With those beautiful curves try a style with side-paneling this instantly gives a slimming illusion while elongating the leg.
    Triangle shape? Let’s embrace these curves around the hips, but we don’t want to choose a pair that digs into our waist. Instead search for styles that fold over or feature a wide waistband that hits right below the belly button. For women who are wider on the bottom, skip prints for “bold solid colors” and try to avoid a crop style and go for the longer leg.
    Petite, the ideal legging here is one with a lower waist. Definitely go for crop or ankle length, which will tend to elongate your legs and offer a taller illusion. Color blocking or prints works beautifully here and even being more risqué go for the cutouts!

 

Savory Eats: Salumeria Pomodoro

    Salumeria Pomodoro may be Huntington’s best-kept secret. Pomodoro presents a unique fusion of traditional Italian with distinct, charming contemporary touches. While most Italian restaurants in the area present you with expected entrees such as chicken parmesan and fettuccini alfredo, Pomodoro is switching things up. 
    The menu is divided into Charcuterie,  Appetizers, Pasta and Entrees. Simple and to the point. Charcuterie features fan-favorites such as Prosciutto, Sopressata, Parmigiano Reggiano, and Pecorino. The appetizers at Pomodoro are worth a visit alone. Baby Arugula with shaved fennel, grapefruit, olives and Parmigiano. Roasted Beets with hazelnuts, blood orange, gorgonzola and saba. Their Calabrian Chicken Wings are a must – fresh herbs, toasted garlic, apricot and calabrian chili pepper glaze. The Grilled Octopus is also a must-try, combining guanciale, roasted garlic, kale and sherry vinegar. Although I didn’t have the pleasure of trying the Raviolo All’Uovo, I will be ordering the house-favorite on my next visit. 
    Pasta dishes are uncommon, and I mean that in the most promising way possible. Cavatelli with Sausage, Rigatoni with Mussels, Bucatini All’Amatriciana, and Mafaldine Bolognese. Entrees are inventive, and memorable. Braised Boneless Short Ribs, Grilled Lamb T-Bones, Crispy Pork Shank, Chicken Milanese, Roasted Chicken Diavola and Italian Pork Sandwich. My guest and I opted for the Crispy Pork Shank – one of my favorite pork dishes I’ve tasted in a long time. Braised pork shank, pickled vegetables, caramelized brussels sprouts, garlic paste, and spicy vinaigrette. To say the pork fell off the bone seems understated. The combination of the garlic paste with the pickled vegetables and spicy vinaigrette and brussels sprouts was absolutely incredible. There is not one single thing I would change about this dish. I urge you to try it as soon as possible.
    At Pomodoro, the food isn’t the only thing worth mentioning. Their cocktail list is impressive, in addition to their wine list. The in-house bartender Christian crafted the menu himself, and it reflects renowned industry knowledge, as well as an unyielding contemporary take on classic Italian cocktails. 
    Pomodoro offers lunch and dinner menus, all available in a stylish, cozy atmosphere. Tasteful décor, warm lighting and impeccable service all separate this eatery from their neighboring competitors. Our server, Anthony, was knowledgeable, friendly and extremely attentive. Each member of the restaurant staff I encountered was more than happy to answer my questions with a smile. The owners were extremely accommodating and pleasant, presenting heartfelt, genuine family-driven values that so clearly are represented throughout their restaurant. They are closed on Mondays, so make sure to plan your visit accordingly. I strongly recommend this establishment for your next Huntington Village outing. 

 

You Can’t Afford The Luxury Of A Negative Thought

Why would I even suggest negative thinking to be a “luxury?” We each fall into negative thoughts at times and momentarily at least seem to enjoy the indulgence. 
 
Why can’t we afford the luxury of a negative thought?  While our physical environment can cause us discomfort, much of our current agony is the result of our inner environment, our own thoughts.

As proof, say the following negative statements aloud with conviction 3 times each. (In private of course)
“My life is hard and will never get better”
“Why try? Nothing will help”  
“It’s no use, I cannot do this. I’m not good enough.”  

How do you feel? Your mood probably dropped somewhat, you felt heavier, and tired. And that was only indulging in negative thought for less than a minute. If you are frequently or constantly thinking like thoughts, you would probably begin to feel really depressed, anxious, and angry much of the time. 

Now say the following positive statements aloud with conviction 3 times each:
“There is much good in my life; I am grateful.”
“I will try.  Things can change.”
“I’m as good as the best, and better than the rest. I can do this.”

How do you feel? Probably elevated, lighter and energized? A few seconds of positive thinking made you feel good in body and mind.  Imagine if you were thinking like thoughts the majority of the time. You’d begin to feel elevated, lighter, energized and more joyful, despite undesirable outward circumstances. And feeling more empowered to change or deal with those difficult outward circumstances. Our internal environment, how we think, is more influential than we believe, and often more so than our external environment, that is, what’s happening in our outer world.  

In our responses to life if one has the habit of primarily negative thinking, this can be so habitual as to be automatic. Like all habits, that can be changed through conscious effort by. 
1) Becoming aware of our thoughts
2) Becoming aware of our bodily and mental responses
3) Changing thoughts which don’t work. 

Understand that nobody is suggesting we deny reality. Some things that happen are downright painful and unjust; that cannot be denied. However it is often possible to extract the positive even within those circumstances. Others have done so. Whatever your circumstances, so can you!

I Cannot Live Without Books


Maria DiGiorgio is a lifelong New Yorker, who currently resides in Commack, with her family.  She is a devoted wife and mother, an educator and designer. Maria is active in her community, as a PTA mom and Girl Scout leader.  She has a passion for interior decorating and loves to garden. She is an avid reader, and enjoys writing about life experiences and parenthood, as well as her personal observations about the world around us.
    What a simple declaration.  What a thoughtful observation.  This sentiment is one I cannot take credit for, as it belongs to Thomas Jefferson, but it is one I fully embrace. Wherever we go, we are surrounded by the written word.  Books, magazines, tablets, circulars, newspapers, pamphlets, maps, street signs, labels, all abound.  There are storybooks, textbooks, novels, fiction, non-fiction, drama, mysteries, thrillers, memoirs, biographies, tutorials, and many more forms of text. For those of us, who shun the notion of being a “reader”, the prospect is simply inescapable.  For those of us, (like myself), who are forever reading, the prospects are simply endless. Reading is essential to living, as it makes our life experiences richer, more profound and more meaningful!
    As an educator, I know that reading is paramount to all things we learn.  It is the very basis of all learning, regardless of the subject matter or content.  With strong reading skills, one can master just about anything, from the ridiculous to the sublime.  Reading is the key to unlocking the potential inside all of us.  Through this medium, we can discover hidden interests we may have, greater passion for knowledge, helpful information and guidance, all to enable us to lead more productive, fulfilling and prosperous lives. 
    Beyond informational or instructional reading, there is reading for the sheer joy of the experience.  Reading offers us an “escape”, into the worlds we may, otherwise, never have the opportunity to enter into.  It sparks our imaginations, ignites our creative juices, satisfies our curiosity, answers our questions, and makes us poised to inquire, even more.  Reading enables us to continue growing, intellectually, emotionally and spiritually. It is a precious commodity, and one meant to share and enjoy with others.
    Exposure to the written word should come as early as birth.  New parents, teachers and caretakers, alike, can and should make storytelling, nursery rhymes, poetry and music an integral part of a child’s daily life.  With these tiny seeds planted so early on in development, the likelihood of embracing and incorporating a love of reading will be greatly enhanced, as children grow.  Make regular visits to the library, bookstore and to any place where the written word can be found.  Enroll your child in reading/literature programs that are readily available at these sites. Celebrate milestones in your child’s reading development, both in school and at home, and set a powerful example by modeling your own reading skills and behaviors. The example you set is the most compelling one of all.  Treat your child and yourself to these wonderful learning experiences, and teach them that reading is not only functional, but that it can be immensely pleasurable.  It is a gift we can enjoy giving to and receiving from the children in our lives, and the inner child inside each one of us, for a lifetime!

    Tucked away in a small strip mall lies a hidden gem that brings the taste of Haitian cuisine right here in Huntington Station. Opening up just one year ago, owner Marie Gomez wanted to bring her heritage to the states by sharing all of the authentic dishes that Gingerbites has to offer. As Marie explains, “I take great pride in sharing with our community the wonderful and unique flavors of the Caribbean, while using locally sourced food products, many of which are organic.”
    Gingerbites is one of those neighborhood places that you just seem to warm up to. Its’ ambience is cozy and welcoming with a friendly staff eager to please.
    As Marie states, “what keeps new people coming in all of the time, is that we offer something that no other restaurant around can provide.” If you just go to their website at www.gingerbitescatering.com you’ll see what I mean.  Some popular starters include; “Malanga Frittas (vegetables) seasoned with herbs and spices with Gingerbites sauce and pikliz with Marinad. Pikliz is a spicy condiment of cabbage, carrots and chile-laced pickles. Fried veggies. Nothing wrong with that! The “Bannan Etoufee” (stuffed Plantain Cup): Mashed plantains shaped into cups, then stuffed with sausage, green and red bell peppers and onions. The sweetness and crunch of the plantains with the savory sausage stuffing, makes this the ideal appetizer.
    Entrees are plentiful, but two that come to mind that I have tried is the “Fritay”; A generous portion of Fried cubes of pork, served with sweet potatoes, breadfruit, plantains, akras, fried sausages, served with house sauce and pikliz condiment. A sensational array of food fit for a King! A great Vegetarian option is “Legume” which is a vegetable stew of spinach, cabbage, eggplants, and carrots. Healthy and Hearty best describes this traditional Haitian classic.  Interested in cooking classic Caribbean cuisine? Dishin With Denise… St. Patrick’s Lucky Sheet Pan

For a Dash of the Irish in a flash, try this “new take” on your traditional corn beef and cabbage. (Instead of 4 hours to prepare how about 45 minutes?)   

The sheet pan meal actually quadruples your cooking surface area, allowing you to roast/cook meals in less time with a surprising crispy edge. Your starchy vegetables caramelize and crisp as well as becoming deliciously tender. You can save even more time as there is no re~platting needed, just serve the pan right to your table for a presentation that will  “Wow the Irish” out of all those lucky enough to share. That sheet pan is more than a cookie sheet now it becomes the perfect blank canvas creating the sheet pan supper. Good Luck! (You don’t have to be Irish to savor the flavor!) This new way of cooking your meal is quick, tasty and less fuss. Easy clean up and downright “LUCKY” results! You have heard it many times the expression “The Luck of the Irish!” you probably assumed that only people from Ireland had “The good fortune”… Not so, it’s more an attitude~ a positive look at a tough situation! So if you’re not home all day and do go to work you too can enjoy the traditional St. Patrick’s meal in the flash of a pan. Green to cooking?  I promise a wee bit o’ help from my lucky leprechauns.

Go to your favorite deli dept. and buy good sliced, already cooked Corned Beef (Boars Head is great.) (How much? It depends on how many you’re serving) do consider lucky leftovers! Buy cabbage already shredded in bag (slaw sliced).
    
Parboil 6 peeled, washed, cut into chunks white potatoes along with 8 peeled, whole washed carrots.  In a bowl add your shredded cabbage, with “boil spices”(mustard seeds, coriander seeds, dill seed, bay leaves, whole black and red peppercorns, all~spice,etc) add 2 peeled and quartered Vidalia onions,  add 1 T of olive oil , salt and peppercorns, cover and microwave on high until soft. Rub your sheet pan with olive oil and start by placing a row of meat (that you lightly brushed with a good mustard and sprinkled with some brown sugar) next place a row of the cabbage/ onions, then place rows of carrots and the potatoes, Sprinkle with black pepper and sea salt the veggies. Place into a 375 degree oven for 8 minutes and then under the broiler for a flash of crisp!

 

Puppy With A Purpose

Recently I had the chance to meet Charlie and Olivia Poff from America’s VetDogs. Charlie is a black Labrador Retriever who is best known as the 'Puppy with a Purpose' from NBC's TODAY show. Both Olivia and Charlie are on most mornings as the show tries to bring awareness to the incredible work they do at America's VetDogs of Smithtown. 

Olivia said, "America’s VetDogs and the TODAY show have teamed up and are working towards Charlie's bright future to help somebody who has helped us by serving our country" She added, their mission is to "give people their
independence back". America's VetDogs was created to provide enhanced mobility and renewed independence to veteran’s, active-duty service members and first responders with disabilities allowing them to once again live with pride and self reliance. 

For the next 16 months Charlie will be raised by Olivia to become a service dog for a veteran in need. Throughout his training, Olivia is going to look at Charlie’s strengths and weaknesses to decide who to match Charlie up with. For example, if Charlie is comfortable around wheelchairs, then they will look for someone who uses a wheelchair. So far, Charlie has been taught to touch a target, turn on and off lights, and push doors and cabinets closed. All these skills will be used to help a veteran with physical and emotional disabilities. Olivia has been working with America's VetDogs for about eights years and is very passionate about her work. As a young girl she wanted to become a veterinarian, but her interests shifted toward a career in the dog training industry. Olivia states that she has always had a love for animals but it wasn’t until her sophomore year in college that she discovered her love of service dogs. 

A great way to help America’s Vet Dogs is to donate. It costs over $50,000 to breed, raise, train, and place one service dog with a family. All the services are provided without charge to the individual. Funding comes from the generosity of people like you, which is why it’s so important to donate. Another way to help is to become a puppy raiser or to volunteer for the many other jobs they need assistance with.

• Matt Lauer is the one that's always most excited to see Charlie when he arrives at the TODAY show. 

• Charlie is named after the army’s phonetic alphabet. (Alpha, Bravo, Charlie)

• Olivia and Charlie begin their day at 3AM to be able to get to NYC for the show.
