A simple but wickedly delicious (Halloween Roasted Chicken Salad). Have this chilled, ready and waiting to enjoy after all the exciting fun the kids have collecting their treats! You don’t need much time to prepare~ if you make it easy~ make it early …you too will enjoy the day! When finally you surrender to the dark and scary night~ all will enjoy this healthy, light delight, especially your (candy dreaming) tired trick or treaters! Add a cup of soup, serve on top of a green salad, or sandwich in between 2 warm toasted English muffins or a toasted split top hot dog roll. A word of caution … the headless chicken may attempt to ring your bell late night looking for his head!! …OOOOOOOO!!!!! Frightening TRICK! To begin the bewitching prep: Buy a headless, cooked and roasted chicken! Now With a sharp knife …CHOP OFF~ his wings and legs! Then remove his slimy skin~…. eeks! Now CHOP him up into bite size pieces, add chopped fresh chives ½ cup fresh chopped parsley, 1 cup diced celery,1/2 cup or more chopped walnuts, desired amount of good mayonnaise and fresh ground pepper and sea salt to taste. Mix together and chill. Discard all unused body parts~ or to be safe…. bury deep in the backyard! BEWARE!! Please …. DO NOT EAT OUTDOORS TONIGHT! Lock up the doors and windows tight, be safe! Enjoy!
