Welcome to Springtime, my absolute favorite season… the days are longer, the air is fresher and the temp’s are warmer. Everywhere we look, we see signs of rebirth and brand new beginnings. It’s time to watch those dormant tree and flower buds open up to the sun above. Blue skies and greener pastures ahead! The first thing I think we all should do is: clean up the outdoor grills and be ready for the season’s start of outdoor cooking. If you do that, then I will share a very easy and delicious meal that can be pulled together in under 25 minutes. Try Trader Joe’s Mahi Mahi burgers. They are scrumptious, quick to prepare, healthy – perfect to lighten and freshen up the menu. These burgers are made just for Trader Joe’s with wild caught, responsibly harvested Mahi Mahi, also known as dolphin fish…although not related to actual dolphins. I just love the slightly sweet mild flavor and firm meaty texture. They are prepared with tasty herbs including paprika, parsley, sea salt and rosemary. A meaty fish burger for sure. Availability is questionable, they run out quick. Find them in the frozen section, a box of 4 priced reasonably at only $ 6.99! Also, don’t forget to pick up Trader Joe’s amazing tartar sauce, english muffins, a fresh tomato, and some crunchy fresh lettuce. Grill burgers on medium heat for 3-4 minutes on each side. Toast up the English muffins, smear both halves with tartar sauce, a tomato slice, lettuce and crack some fresh black pepper on top. A chilled glass of white wine! Done!
