The Holiday Season finds us all so busy shopping, decorating, wrapping, baking, and on and on!  Yes “take out” helps to get us through a few of those nights. What we really need is a one pan meal solution to simplify our dinners during all the hustle and bustle! Here’s a delicious meal made with simple ingredients that yields amazing results~ a real hearty meal with easy clean up for these busy times. Sheet pan suppers have become quite popular. Easy to prepare and just one pan to clean! With your trusty sheet pan, a few fresh staples you too can have a hearty dinner on the table in no time. Set this up in the morning (prep: time 15 minutes) refrigerate until evening and pop it in the oven for 30 minutes. Using store bought polenta all prepared in a tube is so easy~ just slice and bake. It will be crispy on the outside and soft on the inside, pairing wonderfully with sausage, rosemary, mushrooms and butter nut squash. 1 16 ounce tube refrigerated cooked polenta ~ (can be found at Trader Joe’s) cut into ½ inch slices and halved
2-3 cups fresh mushroom slices (baby Portobello)
2-3 cups cubed, peeled butternut squash (can be found prepared in the fresh produce) 
3-4 Tablespoons of extra virgin olive oil 
Sea salt and fresh black pepper
1 ½ lbs. of uncooked Italian sausage
2 tsps. of snipped fresh rosemary

Preheat oven to 425 degrees. On your sheet pan place the sausage, squash, mushrooms and polenta. Drizzle with oil and top with fresh spices. Prick sausages a few times with a fork. Pop into oven until done ~ 30 minutes. Place onto a serving dish. Top with additional fresh rosemary if desired. Pour a glass of wine and relax. Serves 6.
