This Mother’s Day plan a meal fit for a queen…your Mom! A prime rib roast done on the barbeque with creamymashed potatoes and you~ just mushing her up with LOVE!  Today let her know how much you appreciate the many things she is to you.   Mother 1. Person who does the work of twenty, For Free! Prime rib is not a free or an inexpensive meal~but worth the cost in taste and thought~ and the good news is you can cook it outdoors on the grill. Weather permitting ~ eat outdoors and enjoy the fresh air. Trust me, the cards, the flowers, the gifts, even the meal…regardless of what you serve…it will never equate to just spending time together. If it’s not your Mother… anyone you behold in love and with gratitude. PRIME TIME! Happy Mother’s Day to Mom’s around the world!
    Here is a really simple, just about foolproof method for cooking a perfect tender prime rib roast, indirectly on the grill in a pan. Keep your grill cover closed and check periodically. Crusty on the outside~juicy and moist inside. Figure on 12-14 minutes per pound for a bone in roast. Timing is about the only thing to worry about with this meal. A cooked prime rib roast can stand after cooking for 15- 30 minutes before carving. This allows for the juices to flow from the center of the meat to the exterior. 

1 prime rib rib roast  
4-6 sprigs fresh rosemary or  dried rosemary

For the rub
Brush the roast with olive oil
2 tablespoons of black peppercorns ground
2 tablespoons of coarse salt
2 tablespoons of paprika
2 tablespoons of herb de Provence  

Rub the meat all over with dry herbs, especially the sheath of fat on top. When cooking place on a pan ( indirect heat method) at 375 degrees until your meat thermometer reaches internal temperature of 115-125 degrees, place onto a platter and cover loosely with aluminum foil for up to 30 minutes and carve! Pour a glass of vino, and enjoy Mom and the Day!
