Just in time for entertaining and enjoying a long weekend… here’s a new idea on an old Greek theme. Greek salad dip! This Memorial Day~ wow your family and friends with this light, healthy and very tasty dip. Easy to prepare and goes along well with the celebration and festivities of the Holiday. My friend Maria served this at our last book club gathering with pita chips~ we scooped up every last bit!  Just Delicious! The combination of fresh vegetables and salad with a tangy dressing layered with hummus and Greek yogurt is scrumptious. Served as a dip or snack it could also be a quite satisfying meal. Here’s to a Happy Memorial Day weekend.  Remembering all that served and died in our Country’s armed services.  Hope the weather keeps you outdoors making memories! xo   Dishin’ with Denise

1 head of romaine salad and or iceberg lettuce cut into small pieces
1 seedless cucumber cut into bite size pieces.
3 vine ripe tomatoes cut into bite size chunks
½ ~ 1 cup feta cheese crumbled
½ cup Greek plain yogurt
1 10 ounce container of your favorite hummus.
½ cup Kalamata olives pitted and chopped
Dressing (shake till creamy and blended in jar.)
½ cup chopped flat leaf parsley
1 t oregano
3 T red wine vinegar
¼ cup olive oil
Squeeze of ½ lemon
Fresh ground pepper and sea salt 
(Optional: red onion diced small, black olives, pepperoncini chopped green peppers)
Layer in square glass casserole dish a layer of hummus, a layer of yogurt, salad and dressing.

1 bag of baked pita chips to scoop up dip.
