Here’s a variation on egg saladgreen salad with a cooked egg on top. My very busy Dr. son made this for us on our last trip to Texas. I must admit I was a tad bit reluctant,  with just one bite~ I was sold. Delicious, healthy and quick this is what dinner looks like some late nights for this busy son of mine. Easy to prepare… I’d say egg salad at its best. These ingredients, soft, nutty, warm, smokey, crisp and cool nicely combine breakfast with lunch or dinner. It’s great to think outside “the egg carton” for a new and satisfying meal idea. Try this green salad with eggs and ham (bacon) and I’m sure you’ll like them here or there…or anywhere!       Try Them! Try Them! and you’ll agree… I do I do like greens, eggs and ham.  

1 bag of spring mix lettuce  (washed and dried)
Cherry tomatoes cut in slices
1 avocado peeled and diced
6 strips of crispy bacon (cut into pieces)
4 fried eggs (cooked exactly as you like, runny or cooked)
Drizzled with a really good balsamic vinegar
Salt and pepper to taste!
