Is your “Valentine” a special, caring, a really true “all around ~stand up” kind of Love? I do hope so…because nothing says special like a standing rib roast. Easy to prepare this amazing marinated, crusted roast is something to consider preparing for a delicious, unforgettable Valentine’s Day. Guaranteed to deliver the sweet message of LOVE and a STANDING ovation! Delectable prime rib roast on its own is quite the fancy, romantic meal, adding the blue cheese crust is the~ cupids arrow. Use your fine china, crystal, silverware, fresh flowers, your fine tablecloth, and create the atmosphere that speaks straight from the heart. Depending on how many Valentine Loves you’ll be serving ~ ask the butcher for the size Rib Roast you will need. (I hope you have many!) Prime Rib Roast Make a paste by blending all ingredients (except onions and water) together in a food processor and smear over entire roast, cover with saran wrap or use large zip lock bag and refrigerate overnight. Pre heat oven to 325 degrees. Take Rib Roast out of refrigerator and let sit for 30 minutes. Put into roasting pan on rack, (insert thermometer in center of roast) and place the onions and water at bottom of pan. Roast in oven for 2 ¼ ~ 2 ¾ hours. Check thermometer reading~ for medium rare temp 125-130 degrees and for medium 145 degrees. Remove roast when done, place on cutting board and tent with foil. Hopefully you have whipped up some mashed potatoes and a crisp green salad. Now pour the wine, stand up that roast, sit down and savor the flavors and all the love! Happy Valentine’s Day!
