HERE IS WHAT YOU NEED :
- 2 large ripe bananas, smashed
- ½ stick salted or unsalted butter, melted and cooled to room temperature
- ½ cup brown or granulated sugar
- 1/3 cup unsweetened apple sauce
- 2 large eggs, room temperature
- 2 cups all-purpose flour
- 1½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup low fat milk or regular milk
- 1 teaspoon vanilla extract
- ¼ cup chocolate chips – Divide evenly
HERE IS HOW YOU DO IT :
Preheat oven to 350 degrees. Line a 12-cup cupcake pan with cupcake liners; spray the bottoms gently.
In a large bowl using a rubber spatula, combine mashed bananas, butter, sugar, and applesauce; mix until combined. Pour in eggs one at a time, mixing after each addition. Add in dry ingredients; mix to form a batter. Stir in milk and extract; do not over-mix. Divide batter evenly between the 12 cupcakes, then top with chocolate chips and slightly sink them into the muffin.
Place the pan on a cookie sheet and bake for 25 minutes, or until the muffin springs back when touched lightly with the back of a spoon.
