Banana Chocolate Chip Muffins

HERE IS WHAT YOU NEED :

  • 2 large ripe bananas, smashed
  • ½ stick salted or unsalted butter, melted and cooled to room temperature
  • ½ cup brown or granulated sugar
  • 1/3 cup unsweetened apple sauce
  • 2 large eggs, room temperature
  • 2 cups all-purpose flour
  • 1½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup low fat milk or regular milk
  • 1 teaspoon vanilla extract
  • ¼ cup chocolate chips – Divide evenly

HERE IS HOW YOU DO IT :

  Preheat oven to 350 degrees. Line a 12-cup cupcake pan with cupcake liners; spray the bottoms gently.

 In a large bowl using a rubber spatula, combine mashed bananas, butter, sugar, and applesauce; mix until combined.  Pour in eggs one at a time, mixing after each addition. Add in dry ingredients; mix to form a batter. Stir in milk and extract; do not over-mix.  Divide batter evenly between the 12 cupcakes, then top with chocolate chips and slightly sink them into the muffin.

 Place the pan on a cookie sheet and bake for 25 minutes, or until the muffin springs back when touched lightly with the back of a spoon.
